食安問題

從之前發生許多次食安問題，現在大眾都十分注重食品衛生安全，在網路上看上下游的報導時意外得知全家導入潔淨標章，也想起之前全家跟十分在乎食品安全的義美合作時引發多少人去瘋搶商品。

走進全家後，發現全家似乎在店裡沒有多加宣傳這個標章，因此想介紹一下。

什麼是Clean Label

Clean Label (潔淨標章) 起源於2011年英國，由零售通路商發起食品減少使用人工化學合成的添加物，以「刪除或減少人工化學添加物、配方簡單、加工製程簡單以及資訊透明」為原則，成為食品產業發展的重點趨勢。

國內首家連鎖通路導入潔淨標章，主要是為了推廣食品少添加物。審核商品時，會加入「添加的必要性、是否有原料可取代、是否可技術克服、盡量用天然食材」等四大考量，以及要求業者捨棄防腐劑、人工香料、人工色素、人工甜味劑、漂白劑、保色劑、結著劑、含鋁膨脹劑等添加物，並要求原料非基改、農藥殘留需符合法規。
比較少人意識到這個標章帶來的意義，希望有更多人注意到。（上述引用自全家Clean Label的介紹）

用新台幣讓它下架

前面提到了義美，不曉得大家是否還記得那時候用新台幣讓義美下架的言論嗎?

前幾年發生的食安問題，餿水油事件，許多廠商貪圖便宜的原料讓許多消費者受害，這些事情的發生引起許多人關注自己吃的食物是否安全與健康，而在此事件中義美挺過食安風暴，讓大眾都對義美抱持著良好的觀感。

全家在食安風暴後對品牌形象以及食安問題更為重視，因此與義美合作，現在在全家都能看到許多義美商品。

小山林   

在一次課程中於臺南散步街頭，經過了這家店，於是我們進去裏頭享受甜點，發現小山林會將食材的產地、生產者等資訊告訴大家，讓我想起了先前看到的報導。

小山林身處於台南清水寺旁，就在開山路小巷中，稍稍不注意就會錯過，簡單樸實的外觀，進門時就像是去鄰居家拜訪一樣，老闆娘非常的親切，知道我們第一次來的時候還幫我們介紹甜點，講得非常詳細，像是花生醬來自誠鋪，誠鋪的花生都是在地食材，講究天然無添加，還有麵包使用憨吉胖，憨吉胖的麵包全素，無蛋、無奶、無油，都是選用非動物性脂肪的食品，採用百分百在地食材。感覺得出來小山林的老闆娘十分熟悉且非常注重於這塊。

小山林內部裝潢給人一種非常溫馨的感覺，左邊像是書桌，中間似是客廳桌子給朋友交流，右邊則是餐桌，這些感覺讓食物吃起來不只安心還很溫暖。
